Lime Marinated Shrimp and Cheddar Appetizer with Craft
I am always happy to try new recipes and I haven't posted one in a while. I am the kind of a person who doesn't like to eat full meals. I would take snacks and tapas style appetizers over an actual dinner anytime. This recipe I found while partnering with KraftRecipes.com. I am absolutely not against gluten, but know a few people that are sensitive to it. So why not have this app as an option if you have guests over who are gluten free. Besides, the recipe is so easy to make and I think it can be a real hit at a party.
Here is what you need:
8 frozen uncooked cleaned medium shrimp (1/4 lb.), thawed
1 tsp. olive oil
2 Tbsp. fresh lime juice
1 small jalapeño pepper, seeded, finely chopped
16 gluten-free blue tortilla chips (about 1-1/2 oz.)
4 oz. CRACKER BARREL Vermont Sharp-White Cheddar Cheese, cut into 16 slices
1/3 cup guacamole
4 grape tomatoes, quartered
Directions:
Heat grill to medium-high heat.
Thread shrimp onto skewers; brush with oil. Grill 2 to 4 min. or until shrimp turn pink, turning once.
Remove shrimp from skewers; cut lengthwise in half. Place in medium bowl. Add lime juice and peppers; mix lightly.
Top chips with cheese, shrimp mixture, guacamole and tomatoes.
